Durante el procesamiento y la comercialización de los productos pesqueros se producen residuos orgánicos que se utilizan principalmente para la producción de harina y aceite de pescado. En las zonas donde no hay plantas de harina de pescado, los residuos de la pesca y la acuicultura acaban vertiéndose directamente en las fuentes de agua o en sus orillas, lo que provoca problemas de contaminación. Para evitar el impacto que pueden causar y revalorizar los residuos de la pesca, existen alternativas viables desde el punto de vista económico y medioambiental, como la producción de ensilado para obtener un producto de buena calidad nutricional y microbiológicamente estable. El ensilaje se utiliza cada vez más como ingrediente de piensos en la ganadería y la acuicultura, además de como fertilizante. El objetivo de esta revisión fue presentar los métodos de producción de ensilaje, su composición nutricional y su uso como alimento o fertilizante en los campos de la acuicultura y la agronomía.
